Rajma(kidney beans)
Hi, today in this blog, I am going to share a recipe,I am sure everyone has tried. Our favourite rajma. Served with roti and paratha and rice, this recipe is superdelicious. This dish is very popular in North India. Cooked rajma or kidney beans is extremely tasty and flavourful with wide array OF INGREDIENTS like Ginger garlic paste, masala and tomatoes.
Rajma is popular amongst all and mostly eaten with rice. Some dhabas serve it with butter naan or garlic naan. Kidney beans can be cooked easily with basic spices. One can add as per their preference. Some may keep it mild while some spicier. We will today make Punjabi style rajma or kidney beans . Easy to cooked them is soak them overnight in cold water. If in a rush I would advise soaking in hot water as it reduces half the soaking time. So let's get started.
Ingredients
Soaked kidney beans 250 GM's.
Water one litre for soaking and cooking.
Ginger garlic paste 1tbsp.
Onion paste 3 tbsp.
Tomatoes 3 / tomato puree
Red chilli powder
Salt
Coriander powder
Garam masala
Oil 3 tbsp.
Directions
1. soak rajma or kidney beans overnight in sufficient water. This process will soften them and cooking process will be short in time.
2. Now drain the rajma water and boil them in pressure cooker with 4 whistles.
3. Do not drain the kidney beans water after boiling them. We will use this water for cooking as this water has all the juices of kidney beans, has starch and makes it naturally thick and flavourful.
4. Take 3 tomatoes, dices them roughly.
5. Take onions and make a fine paste. This paste will make thicker masala gravy.
6. Take oil in pressure cooker and add khada masala. Let it jitter.
7. Now add onion paste to it. Saute for 5 minutes. One can use diced onion but then you have to use carmalised. Fry diced onion in oil for 15 minutes. Then use them , don't make them too crispy. I have used paste.
8. Add ginger garlic paste to it . The oil should be sufficient for MASALA TO cook . One the onions cooked properly and oil starts to separate,add tomato puree or diced tomatoes.
9. Give it a mix, now add all the spices like red chilli powder, coriander powder, garam masala, salt and mix.
10. Now once the masala is seperates with oil, add boiled and drained kidney beans,mix well in masala.
11. Add the kidney beans left over starchy water and give a mix. This will keep gravy thick and sticky and flavourful.
13. It will be done in no time. The rajma are already cooked while boiling. It will take around 10 to 15 minutes.
14. Serve hot with rice. You can garnish with coriander leaves.
